• Tomato Watermelon Gazpacho

It’s been hot… really hot! Who wants to turn on the stove or oven? Not us. Best hot weather meal? Gazpacho! It is a house favorite here and we love our tomato gazpacho recipe but we thought adding watermelon would be a fun twist. The watermelon adds a mellow sweetness that is just delicious! Tomato Watermelon Gazpacho Ingredients: 4 to 5 medium Summer tomatoes chopped 4 cups diced seedless watermelon 1 or 2 cucumbers, peeled, seeded and chopped 1 red bell pepper, chopped 1/2 small red onion chopped 2-3 garlic cloves smashed and chopped 1/3 cup loosely packed basil and mint, plus small leaves for topping 1-2 teaspoons Kosher salt…

  • S’mores Oreo Bark

Are you looking for an easy no bake Summer (or any season!) sweet treat that both kids AND adults will love? Look no further. This recipe is the bomb.   S’mores Oreo Bark Ingredients: 3 1/2 Cups dark chocolate chips or chopped dark chocolate pieces 1/2 Cup white chocolate chips or chopped white chocolate pieces 1 Cup marshmallow Fluff 12 Oreos (for gluten free I like Glutino) 4 Graham Cracker Sheets (for gluten free I like Pamela’s) Instructions: Line a cookie sheet with parchment paper. Melt 1 1/2 cup of the dark chocolate chips in the a microwave safe bowl (I like to use a Pyrex measuring cup) and pour melted…

  • Strawberry Orange Breakfast Cake

The local market here has a table tucked in the back for “last chance” fruits and vegetables. Very (VERY) ripe fruit and on their way out vegetables- perfect for baking (or soup making in the winter). The other day they had strawberries for $0.99 so I knew I needed to bake something! Cookie & Kate has a recipe for Lemony Blueberry Cake in her cookbook that I’ve been dying to try but my kids are still anti blueberry. In come the over ripe strawberries! This is a direct adaptation of her recipe just swapping out the flavors a bit. I felt like orange would go better with strawberries than lemon!…

  • A Relaxed Weekend

I am beat guys. I need a breather. The end of school is a real energy suck, am I right? This Monday also marked 9 months since I lost my brother. 9 months! I am trying to wrap my head around that. Heading into Summer is very bittersweet. We are so excited for a break at the beach but Summer was my time with my brother. We spent every weekend together. Seriously, every weekend. It is going to be a difficult adjustment for all of us; I am going to cut myself some slack as I navigate this new path. Soooo on that note…. you get a greatest hits post.…

  • “Burner Juice”

I have loved celery juice now for a little over 9 months. I talked about it here, in this post. I swear to goodness it helps with digestion, clarity, my skin, my hair… which I think is all tied to gut health. I really think it has healed my gut from SIBO. I have read science behind “The Celery Juice Diet” thanks to the Anthony William books and I think it works, maybe it’s mumbo jumbo, but who cares if I feel better, right? So I have been strict, per Anthony William, about drinking straight, pure, freshly made celery juice… until we went to LA last week. I had a juice…

  • Summer Grilled Chicken Parmesan

This is barely a recipe but still worth posting! “Chicken Parm” is a staple in our house; sometimes I take short cuts with Bell & Evans GF Chicken Cutlets or Tenders, but this shortcut is even better. I had the grill hot and ready to go for Sunday afternoon burgers so I generously seasoned some chicken cutlets and grilled them up for a different take on chicken parm! It doesn’t hurt that this is a much lighter dish without the breading! Once the chicken is grilled it is as easy as assembling the dish and popping it in the oven! Bonus, I grill the chicken ahead of time and assemble…

  • May Favorites…

May is all about getting ready for summer right? Or at least getting my closet ready for summer. I have been on a major purge lately getting rid of things we don’t love or use anymore (read HERE), and my closet has been hit hard (more on that in a future post!)… so I need some fun replacements! Also, have been on a reading tear, I even got to meet the lovely sisters behind the Liv Constantine hit The Last Mrs. Parrish, #12 on the list! Without further ado… my May favorites! Click on item name to shop! Shoshanna Tinsley Dress – I tried this on on a whim and…

  • Kid’s Chocolate Beet Smoothie

As the school year winds down into Summer, things tend to get a little crazy, no? Even if you don’t have kids in school it just seems like the days are short and packed. So many appointments you’re trying to wedge in before summer and all the events… it’s wonderful to have a full calendar but it leaves me short on time. I have been prepping breakfast the night before for everyone because it starts the day off right. Thad’s Banana Bread,  Morning Glory or Blender Muffins, dreamy Dark Chocolate Breakfast Pudding or smoothies- it all makes it a touch easier in the morning rush. For a smoothie you just need…

  • My Own Magic Green Sauce

Okay, a Pinch Of Yum’s 5 Minute Magic Green Sauce is really… well… magical. I love it and would put it on anything and everything (make it, really!)… BUT, my oldest has a sensitivity to pistachios and parsley (I know, so odd) and has a really awful reaction… so it doesn’t work for family dinner. And actually, neither does the jalapeño… This means I needed to make my own version of this sauce that is friendly to my house, and my kids gobbled it up! My Own Magic Green Sauce   Ingredients:  2 Bunches of cilantro cleaned and rough chopped (stems too!) 1 Medium/large avocado or 2 small avocados 1/2…

  • Pina Colada Ice Cream (Dairy Free)

If you like Pina Coladas and getting caught in the rain… who doesn’t love that Rupert Holmes song? My kids love it AND they love Pina Coladas, virgin of course, and fully proved that over vacation. They were immediately requested when we returned home despite not having a pool to enjoy them next to. We have been experimenting with vegan ice creams ( I still need to write up the Strawberry Chocolate Chip one!) thanks to The Faux Martha’s INCREDIBLE Black Vegan Ice Cream recipe. You guys, it is JUST. SO. GOOD. I didn’t set out to find a vegan/dairy free ice cream but her recipe popped up in my…
