Make Ahead Breakfasts

Okay… summer is now over (unofficially). That Tuesday after Labor Day always seems to be the day despite what the lunar calendar says. The melee sets in; back to school, back to work, back to life. It can be hard to get out the door in the morning (or sit to write a blog post!), am I right?

I pulled together my favorite recipes that you can make a head and get you and/or your kids out the door even faster without the headache!

Muffins: So easy to make ahead and keep on the counter or better yet, in the freezer! Make a double batch while you are baking! All of these are made with wholesome ingredients and kid approved!

Oats: Overnight oats is the easiest solution to a rushed morning… I mean it’s all done. Add some pre cut fruit, a teaspoon of nut butter and/or yogurt and you are good to go! You can also make a big batch of cooked oatmeal and reheat in the microwave for 60 seconds if you prefer a hot breakfast. Find my two favorite recipes below!

Eggs: The perfect protein. But how do you make it “grab-and-go”? One word: Frittata. You can add in whatever you like (bacon, ham, spinach, peppers…) to make it your favorite. Cook as directed and cut into wedges or get really clever and make in muffin tins for perfect portability (shorten cooking time!). Reheat or eat at room temperature!

Granola: A no-brainer when it comes to grab and go. You can just add to your favorite cup of yogurt or you can really plan ahead and make a parfait the night before. All you need to do is layer yogurt and fruit in a container and then add the granola the next morning (it will get soggy otherwise!). Granola is REALLY flexible and you can tailor it to your taste buds. Below find my “Formula” but also two of our house favorites!
