Week Eight Coronavirus Hiatus: The Corona Kitchen File

Week EIGHT. That feels really bananas. That means, in the house, we have had weeks and weeks of cooking. Breakfast, lunch & dinner. We have only had a handful of take out nights- those nights really feel like a vacation… and we should probably do it more.

We have already discussed the ins and outs of getting groceries delivered a few weeks ago… I think it has gotten easier to get everything you need delivered! (Read here: Week Five Coronavirus Hiatus: Grocery Games)

I have been receiving a lot of questions about what I am cooking and pleas for ideas.  So here we go… this time has given me the opportunity to make some recipes I have wanted to try but I am also relying on some old favorites of my own.

I have printed all these recipes out (even my own!) and ones I want to try; they are living in a manila file in my kitchen… the Corona Kitchen File…

It will be interesting to see what I have in there by the end of this and what we love the most.

Let’s start with breakfast:

Dark Chocolate Breakfast Pudding – easy and make ahead; my kids favorite.

EASY Paleo Pan Cake – Weekend treat. Makes it so easy.

Kid’s Chocolate Beet Smoothie – Chocolate masks the beet flavor here – so good!

Obviously…. Bananas.

Thad’s Banana Bread – just make it. You won’t be sorry.

Banana Blueberry Muffins – just as good with the added twist of blueberries.

Cinnamon “Latte” – breakfast… or anytime. I adore this. Such a treat.

 

Lunch:

We have been trying to aim for leftovers or sandwiches. I am always up for a noodle soup…

Dinners:

Sweet Potato & Chicken Chili  – Super easy and super good. Freezes well too!

30 Minute Pork Ragu with Balsamic Roasted Vegetables – Always a go to… and we seem to have a freezer full of ground pork. This works great with ground beef too… even turkey or chicken!

Alison Roman’s Focaccia as pizza – I use Cup4Cup gluten free flour here and it works like a charm. Homemade pizza can also double as an activity with kids. Win win.

Half Baked Harvest Thai Peanut Chicken – Easy, delicious and a great use for chicken thighs… you have some of those in your freezer right?

Half Baked Harvest Enchilada Rice Bake – Okay, this was an instant winner. It is almost like upside down nachos. I have made it with out the rice too… equally as good.

Extras and sweets:

Why do we all want to bake everything? Bagels and brownies and snack cakes… I even have an array of flours coming to attempt gluten free artisinal bread… stay tuned.

Cookie Dough – we all love this one, the secret freezer treat.

Cashew Butter Cookies – This may be my favorite cookie ever. Chewy with caramel notes!

Melissa Clark’s Chocolate Mayo Cake – Easy and you will for sure have the ingredients on hand. We doubled this as a breakfast cake with berries and yogurt!

Half Baked Harvest Easy Pretzel Bagels – surprisingly easy and oh so good! We are obsessed…

King Arthur Gluten Free Honey Oat Bread – Also easy and it was delicious toasted with strawberry jam…

So there are some of the best things we have made for the past 8 weeks… I have a few other excellent recipes I need to write up this week too!
