We love a taco around here… and I love being able to make a vegetable side for tacos (or to put in tacos!) which my kids will actually eat!
Coleslaw or a chopped kale salad is always a win! This dressing is PERFECT on cabbage or shredded kale… even raw brussel sprouts. Actually, a raw broccoli salad with a little red onion would be awesome too!
Don’t forget it as a marinade… I threw some on chicken for the grill tonight- so good!
Tangy Lime Dressing
- 1/4 Cup olive oil
- Juice of 2 limes
- 2 Tablespoons Mayonnaise
- 1/2 teaspoon of cumin
- 1 clove of garlic, minced (I run through a garlic press)
- Large squeeze of honey
- Salt & Pepper to taste
- Mix all ingredients together in a jar, whisking well to combine.
- Pour and toss with your favorite greens or thin sliced raw vegetable!
