
Christmas Cookies: What I’m making this year!
I had every intention of putting together some thoughtful words for this post about how hard this year has been and the tradition of Christmas cookies. But, unfortunately, I just couldn’t get my thoughts out on paper (or keyboard). This year has been rough, I miss my family and friends (I haven’t seen my brother in California in over a year and it’s painful!), but so does everyone else. I am not alone!
I have found myself hanging on to traditions, clutching really, because it is a connection to my brother, Thad. But, this year is too wacky and those traditions only seem to exacerbate his large absence; especially at the holidays. So I am going to shake up the traditions… with cookies. (Okay and maybe a few other things… but let’s focus on cookies!)
Here is what I am making this year, some new ones from fabulous chefs, cooks and bloggers and a few of my own recipes too!
Fudgy Rum Balls: I mixed up Melissa Clark’s recipe using Gosling’s Rum and Pamela’s gluten free cookies. They are fudgy and addictive and I think I need to make another batch…
Graham Toffee Candy: Watch out… this is so good, too good! My father already told me to stop making it- ha!

Twix Bars: These are just an all time favorite so they need to be made! I love to have these in my freezer at ALL times!

Hot Chocolate Lace Cookie: Another Half Baked Harvest recipe (she’s amazing) and a new one for me. I can not wait to try it out!

Gingerbread Men: My kids specifically asked to make Gingerbread Men this year so I sought out this recipe! King Arthur is always great for recipes!

Coconut Macaroons: These are my husband’s absolute favorite and so easy and good!

Cut Out Sugar Cookies: These are always a holiday favorite!
Another sweet treat we made this week was Peppermint Brownies… this is the easiest hack ever. I used a GF brownie mix (I love King Arthur, it is the BEST) and follow the instructions and then for the last 5 minutes of baking you add your peppermint candies (starlight mints or crushed candy canes!) and you have peppermint brownies!
*I did try adding the peppermint at the start of baking and they sank to the bottom and get stuck to the pan – ha!
