Banana White Bean Muffins 

Those amazing chocolate black beans muffins and brownies are everywhere… it got me thinking; can you bake with white beans? Yes, yes you can. We love flourless muffins in this house and these are fast and easy. And my kids will eat anything that has chocolate chips involved.

Banana White Bean Muffins
1 ripe banana

1 can white beans drained and dried

1/4 cup almond butter

1/4 cup pure maple syrup

2 tsp pure vanilla extract

2tsp flaxseed meal (optional, I like the texture it adds)

3/4 tsp baking powder

1/4 tsp salt

1/8 tsp baking soda

1/4 cup mini chocolate chips for plus a few for the tops
Preheat the oven to 350 F and grease or line 9 muffin tins; I use coconut oil spray because I have it, but anything will do.
Add all ingredients except chocolate chips to a high speed blender or a food processor (I’ve used both!). Blend on high until smooth, scrape sides and pulse as needed. Then add the 1/4 cup chocolate chips and do a few pulses to incorporate but not chop. Pour into the muffin tins or use an ice cream scoop to fill. Bake 20 minutes, remove and let cool for a bit before removing from pan. Store in an airtight container.
