
Roasted Sausage & Tomatoes
ROASTED SAUSAGE WITH TOMATOES
This may be my most favorite “non-recipe” recipe ever. So good for a quick week night dinner and you can alter it so many ways with what you have on hand! Also quite perfect to cook up and drop at a friend’s house that might be in need of a good meal! I learned this from Jamie Oliver (his books are fabulous), and have taken his recipe and simplified it. Sorry guys, this is a no exact measurements wing it recipe!
1 pound sausage, I like uncooked chicken sausage from the meat counter but pork is great too. You can go spicy, sweet Italian or one of those fun adventurous ones like provolone and parsley (our Whole Foods has that!)
1 container of cherry or Campari (cut in half) tomatoes
1 onion thinly sliced (or a shallot or some garlic or scallions… you get the drift)
Olive oil
Balsamic Vinegar
Salt & pepper
Seasonings- If I have fresh herbs on hand I will throw them in (thyme, oregano etc ), or you can just go with dried herbs or super simple… garlic powder. Total staple in my pantry
Preheat the oven to 425. In a cast iron or oven proof pan add your tomatoes, onion, sausages and seasonings. Drizzle well with extra virgin olive oil (maybe 3 times around the pan) and good balsamic vinegar and season with salt and pepper. Toss together, then make sure the sausages are on top of the tomatoes.
Place in oven for 30 minutes, then check tomatoes and turn sausage over and put back in for another 20 to 30 minutes. I like mine quite golden and my tomatoes quite reduced! If is taking much longer for the tomatoes to reduce remove the sausage to a plate and you put the tomatoes back in the oven or even throw them on the stove top to get them to a consistency you like.
Serve over pasta, spaghetti squash, risotto, cauliflower rice, or crusty bread… endless possibilities!
