
Artichoke and Tahini Everything Sauce
Artichoke & Tahini Dressing/Sauce/Slather/Dip… “Everything Sauce”
I’m not even sure what to call this creation. It spawned from a recipe from the new Food52 book Mighty Salads, I changed a few things (naturally) to suit my taste buds. What I got was an earthy, smokey, sweet & spicy jar of awesome.
I toss it with roasted vegetables (broccoli and sweet potatoes being my favorite!), spread it on toast with avocado, stir into hot lentils/grains, thin with water to make it a salad dressing (think hearty greens like kale) or dip chips into it! The possibilities are endless!
Artichoke and Tahini Everything Sauce
5 artichoke hearts (I used canned)
2 cloves of garlic
7 tablespoons of tahini
1/3 cup of water (more if needed)
5 tablespoons of good olive oil
2 tablespoons of sherry vinegar
2 teaspoons of honey
2 teaspoons of smoked paprika
1/4 teaspoon of red pepper flake (more or less depending on your desired spice level)
1/2 teaspoon of sea salt
Add all ingredients to a high powered blender or food processor and blend until smooth. Add more water if needed as well as salt and pepper. Enjoy!
I also mixed with a little coconut milk and tossed with carrot noodles… perfect!
