• Strawberry Orange Breakfast Cake

The local market here has a table tucked in the back for “last chance” fruits and vegetables. Very (VERY) ripe fruit and on their way out vegetables- perfect for baking (or soup making in the winter). The other day they had strawberries for $0.99 so I knew I needed to bake something! Cookie & Kate has a recipe for Lemony Blueberry Cake in her cookbook that I’ve been dying to try but my kids are still anti blueberry. In come the over ripe strawberries! This is a direct adaptation of her recipe just swapping out the flavors a bit. I felt like orange would go better with strawberries than lemon!…

  • Kearsley Lloyd on Sun Protection

Sun protection in the hot summer months is crucial! Beach time, golf courses, tennis matches, amusement parks; we all spend so much time outside! I am so excited to have my incredibly talented Rhode Island friend, Kearsley Lloyd share her wisdom today on A Modern Housewife! Kearsley now lives full time in Bermuda (yes, my other favorite place!) and is a graphic designer and artist. She specializes in custom designs, branding and illustrations. She has found a niche working with brides to create specialized logos, invitations and accessories for everything surrounding the big day, and creating monograms to carry with them beyond.     In addition she designs corporate logos, boat…

  • Summer Grilled Chicken Parmesan

This is barely a recipe but still worth posting! “Chicken Parm” is a staple in our house; sometimes I take short cuts with Bell & Evans GF Chicken Cutlets or Tenders, but this shortcut is even better. I had the grill hot and ready to go for Sunday afternoon burgers so I generously seasoned some chicken cutlets and grilled them up for a different take on chicken parm! It doesn’t hurt that this is a much lighter dish without the breading! Once the chicken is grilled it is as easy as assembling the dish and popping it in the oven! Bonus, I grill the chicken ahead of time and assemble…

  • Kid’s Chocolate Beet Smoothie

As the school year winds down into Summer, things tend to get a little crazy, no? Even if you don’t have kids in school it just seems like the days are short and packed. So many appointments you’re trying to wedge in before summer and all the events… it’s wonderful to have a full calendar but it leaves me short on time. I have been prepping breakfast the night before for everyone because it starts the day off right. Thad’s Banana Bread,  Morning Glory or Blender Muffins, dreamy Dark Chocolate Breakfast Pudding or smoothies- it all makes it a touch easier in the morning rush. For a smoothie you just need…

  • Boca Beach Club and What I Really Packed For Spring Break!

After our Fall and Winter we really wanted to get away for a proper Spring Break. We needed some sunshine and some relaxation and not much else. But where to go? We rely heavily on Bermuda for getaways (why wouldn’t we!) but a friend recommended The Boca Beach Club, a Waldorf Astoria Hotel, when we couldn’t find anything else that peaked our interest.  Amazingly they had availability and the flights into West Palm Beach weren’t astronomical when we went to book… only two weeks ahead. Sold. What was appealing about the property is it is actually three hotels under one umbrella. You have access to the restaurants and activities at…

  • My Own Magic Green Sauce

Okay, a Pinch Of Yum’s 5 Minute Magic Green Sauce is really… well… magical. I love it and would put it on anything and everything (make it, really!)… BUT, my oldest has a sensitivity to pistachios and parsley (I know, so odd) and has a really awful reaction… so it doesn’t work for family dinner. And actually, neither does the jalapeño… This means I needed to make my own version of this sauce that is friendly to my house, and my kids gobbled it up! My Own Magic Green Sauce   Ingredients:  2 Bunches of cilantro cleaned and rough chopped (stems too!) 1 Medium/large avocado or 2 small avocados 1/2…

  • Pina Colada Ice Cream (Dairy Free)

If you like Pina Coladas and getting caught in the rain… who doesn’t love that Rupert Holmes song? My kids love it AND they love Pina Coladas, virgin of course, and fully proved that over vacation. They were immediately requested when we returned home despite not having a pool to enjoy them next to. We have been experimenting with vegan ice creams ( I still need to write up the Strawberry Chocolate Chip one!) thanks to The Faux Martha’s INCREDIBLE Black Vegan Ice Cream recipe. You guys, it is JUST. SO. GOOD. I didn’t set out to find a vegan/dairy free ice cream but her recipe popped up in my…

  • Honey Orange Buckwheat Pancakes

We recently went into the city to see The Warhol Exhibit before it left The Whitney. Being an Art History major in college I was thrilled to get to see it… I wrote my senior thesis on comparing and contrasting Warhol and Pollock. I digress… the kids seemed to enjoy it and I was thrilled when my oldest brought up one of the pieces toward the end of the next week; “Mom, do you think I could do a self portrait like the green one… we could set it up like…”.   But what they REALLY enjoyed was the lunch we grabbed after. We found a little gem called The…

  • Wooden Spoon Sloppy Joes

My oldest asked if we could make sloppy joes after flipping through a kid’s cookbook. Meat, check. Sauce, check. Bun, check. What more could a kid ask for? I was immediately thrown back to “hot lunch” day at my small day school in Maryland. I think those Joes either came from a can or a McCormick spice pack. So, yes, my answer was “of course we can make these from scratch my dear!”. I started looking around for a good recipe and every single one had way too many steps and way too many measurements. I don’t need to get that many kitchen items dirty to make this simple dinner…
