    Every Christmas my family made sugar cookies. We had about 50 different cookie cutters, we each had our favorites (mine the dachshund!), and loads of sugar decorations.     I have wanted to make my own peanut butter cups for a while now… but I have been too lazy. It felt like a complicated thing to make.       Most asked question? Of me anyways… “What is your favorite cookbook?” That is a TOUGH question. I could never pick ONE favorite… I have a cookbook obsession. I have A LOT of cookbooks.       I will be honest. New Year’s Eve is not my favorite “Holiday”.     Frozen “Cookie Dough” Bites I adapted these from a recipe a friend forwarded on but not sure of the origination! They remind me so much of those little frozen toll house cookie dough bites you could buy back in the good old days (elementary school!)- no refined sugar or wheat, win-win! – 1 cup gluten free oats – 1 tablespoon melted coconut oil – 1/4 cup real maple syrup – 1/2 cup pitted dates – 1 teaspoon of pure vanilla – 1/4 teaspoon sea salt – 1/2 cup mini chocolate chips Add all ingredients except chocolate chips to food processor.
