• EASY Paleo Pan Cake

    We love a weekend pancake breakfast… I don’t love standing over the stove for a half hour and making my family wait to eat until my pancakes are done at the very end… know what I mean? So I thought, why can’t I just put the whole thing in the oven and make a “pan cake”- well, of course I can! The real genius of this is the Bob’s Red Mill Paleo Baking Flour– it makes THE BEST pancakes and waffles.   • Quick Pickles

    We love pickles around here. It is so easy to make a quick pickle and it elevates any dish. Tacos, salads, burgers, stir-fry, rice bowls, sandwiches… okay I will stop. The tang and crunch of a quick pickle just makes everything taste better! We love keeping red onion quick pickles in the fridge (my kids LOVE them) but don’t stop at red onions. Carrots, radishes, cucumbers (obviously), green beans, cauliflower… so many options! I usually double the batch of vinegar and make two different types at once! I use honey here as a sweetener because I always try and go the less refined route, but I really like the earthiness…

  • Cashew Butter Cookies (Paleo!)

    Remember those seriously easy peanut butter cookies that only had three ingredients? Well why can’t they be cashew butter? And while we are at it let’s make them paleo with coconut sugar instead!     I started with Smitten Kitchen’s recipe for Salted Peanut Butter Cookies and made some simple swaps. Super easy, low maintenance recipe,  but I recommend using a mixer because nut butter can be hard to stir!

    Graham crackers smothered in vanilla toffee & dark chocolate with a sprinkle of pecans… I really struggled to name this recipe… it is not a cookie. Is it bark? Is it candy? Is it the so called “Christmas Crack”? Let’s not limit this to Christmas because it could (and should) be made all year round… so let’s call it Graham Toffee Candy!   • Baked French Toast (Gluten Free)

    This recipe all started because I felt insanely wasteful throwing away the heels of a loaf of bread (usually 4 pieces!) because no one would eat them. The end of a gluten free sandwich loaf if not like scoring the end of a French baguette after all (yes, I miss a French baguette!). So I started saving the heels in the freezer… what could I make?     Fall is here despite what the temperature outside may be! I am ready for super easy, delicious & warming dinners.
