    Coconut Macaroons. I think I first started making these for my in-laws for Passover early in our marriage. The first time I brought them my husband’s grandparents jubilantly stated that these were the best macaroons they had ever had. Ever.     Roasted pineapple. Another inspiration from our quick trip into NYC. We did have one meh meal at a place that shall remain nameless, but the silver lining (besides providing us with a laugh) is that it turned us onto the idea of roasted pineapple.     My apologies for falling off the posting band wagon… I am not quite sure where the last few weeks went! But, I am back with a very sweet treat for you all.
