    Week four, that seems really unbelievable. I read a great NY Times article last week about relaxing on the “To-Do List”; easing up on the need to feel productive. I couldn’t agree more.     Alright, alright, alright… here we go, week three! How is everyone doing? Stir crazy? Hanging in? I have found that a daily (okay, almost daily) dose of exercise has been doing wonders over here.     Fall is here despite what the temperature outside may be! I am ready for super easy, delicious & warming dinners. In comes my best kitchen gadget, the Instant Pot.  This genius little appliance makes quick work of 5 ingredients (yes FIVE! Okay, 6 with the bay leaf… and salt and pepper just don’t count!) and puts a chili on your table in about an hour start to finish. And it tastes like it has been on the stove for hours!     Okay all my Instant Pot fans… this is SO GOOD. And so very perfect for these blustery cold days. It is FRIGID where I live! Who doesn’t crave comfort food in the winter? This is also a perfect recipe for a Super Bowl upcoming shindig- who are you rooting for? Sometimes we are pro bean in this household… sometimes anti. So I love that this is a no bean chili that gets bulked up a bit with addition of zucchini (I promise your kids won’t know it’s there!).
