    Okay… the Holidays are busy! We still entertain or have to show up with a little something for all the fun gatherings, right? I have a few never fail hors d’oeuvres that are as simple as grabbing a few things at the store and assembling.   • Summer Grilled Chicken Parmesan

    This is barely a recipe but still worth posting! “Chicken Parm” is a staple in our house; sometimes I take short cuts with Bell & Evans GF Chicken Cutlets or Tenders, but this shortcut is even better. I had the grill hot and ready to go for Sunday afternoon burgers so I generously seasoned some chicken cutlets and grilled them up for a different take on chicken parm! It doesn’t hurt that this is a much lighter dish without the breading! Once the chicken is grilled it is as easy as assembling the dish and popping it in the oven!   • Boca Beach Club and What I Really Packed For Spring Break!

    After our Fall and Winter we really wanted to get away for a proper Spring Break. We needed some sunshine and some relaxation and not much else. But where to go? We rely heavily on Bermuda for getaways (why wouldn’t we!) but a friend recommended The Boca Beach Club, a Waldorf Astoria Hotel, when we couldn’t find anything else that peaked our interest.  Amazingly they had availability and the flights into West Palm Beach weren’t astronomical when we went to book… only two weeks ahead.   • Pina Colada Ice Cream (Dairy Free)

    If you like Pina Coladas and getting caught in the rain… who doesn’t love that Rupert Holmes song? My kids love it AND they love Pina Coladas, virgin of course, and fully proved that over vacation. They were immediately requested when we returned home despite not having a pool to enjoy them next to.   • Dark Chocolate Breakfast Pudding

    Okay… so this isn’t really pudding. It’s an overnight oats recipe, but my kids call it “breakfast pudding” so that’s what I’m going with. Such an easy recipe. Make a batch in individual jars at the start of the week and you are good to go for a few days! The key is the Special Dark Cocoa Powder (who else loved that miniature Hershey’s bar when they were a kid?) – it makes it that much more decadent. You can certainly use regular cocoa powder if you don’t want to add another to your pantry but we love it! Dark Chocolate Breakfast Pudding (Makes 2 servings and can be multiplied easily)…
