• Raspberry Compote

Raspberry Compote is the perfect topping for homemade yogurt. Or ice cream… or toast… or pound cake… or over goat cheese… or swirled into pancake batter. See where I am going here? It takes anything and elevates it; perfect for entertaining or just making Sunday morning breakfast a little more exciting! Bright, slightly sweet and so easy to make; this is a great recipe to have in your repertoire! Raspberry Compote 12 oz of raspberries (2 small containers or one of those big long ones) 1-3 Tablespoons of real maple syrup (all dependant oh how sweet you like it, if it was just for me I would do a heaping…

  • Instant Pot Meatballs Marinara

My brother and sister-in-law gave me an Instant Pot for Christmas and I have used it every day (if not twice a day!) since I have gotten home from vacation. No joke, this thing is amazing! I am currently weeding my way through various cook books to learn what I can about best practices for the Instant Pot. I will write up a review of the best things I have tried… give me a month though. In the meantime as I am trying to create some of my own recipes I have come up with quite possibly the best meatball ever. First things first. The Instant Pot. I have…

  • Orange & Cardamom Vinaigrette

So I am a sucker for a new product at Trader Joe’s… always perfectly displayed and priced so well that you don’t mind taking a flyer on something new. Sometimes they are misses, but not often. When I saw the new Pomegranate Vinegar the other week I had to get it! Anything to inspire a new salad dressing! After a bit of brainstorming I have come up with a great dressing for your Fall salads! Orange & Cardamom Vinaigrette 1/2 Cup Olive Oil 1/4 Cup Pomegranate Vinegar (if you can not find this you could swap red wine vinegar or even raspberry vinegar) 1 to 2 Garlic Cloves (depending on…

  • Artichoke and Tahini Everything Sauce

Artichoke & Tahini Dressing/Sauce/Slather/Dip… “Everything Sauce” I’m not even sure what to call this creation. It spawned from a recipe from the new Food52 book Mighty Salads, I changed a few things (naturally) to suit my taste buds. What I got was an earthy, smokey, sweet & spicy jar of awesome. I toss it with roasted vegetables (broccoli and sweet potatoes being my favorite!), spread it on toast with avocado, stir into hot lentils/grains, thin with water to make it a salad dressing (think hearty greens like kale) or dip chips into it! The possibilities are endless! Artichoke and Tahini Everything Sauce 5 artichoke hearts (I used canned) 2 cloves…

  • Ramp Pesto

Ramps pop up in grocery stores in the Spring for a short window of time- they are delightful! I think this recipe gives you a lot of bang for your buck! RAMP PESTO One bunch of ramps 1/2 cup pistachios 1/2 cup grated pecorino Romano 1/3 cup olive oil (or more if too dry) Sea salt Pepper Juice of half a lemon Wash and trim the ends of your ramps. Cut in half and add to food processor. cut off the leaves of the ramps. Add the pistachios and pulse a few times. Then add the cheese, a few grinds of pepper and a pinch of salt, pulse a few…

  • Chimichurri

I LOVE making a really flavorful condiment at the start of a week and adding it to dishes all week long. This is a bright and super flavorful sauce that is great on tacos, eggs, mixed into a salad dressing or even to top a burger! Chimichurri ¾ cup olive oil 3 tablespoons Sherry wine vinegar or red wine vinegar 3 tablespoons fresh lemon juice 3 garlic cloves, peeled 2 medium shallots, peeled, quartered 1 teaspoon fine sea salt ½ teaspoon freshly ground black pepper ½ teaspoon red pepper flake (optional depending on who likes spice in your house!) 1 bunch fresh parsley stemmed 1 bunch fresh cilantro stemmed Combine…

  • Italian Dressing

Who remembers that packet of Italian dressing you made in a shaker bottle? I love, love, loved it! On greens, pasta salads or even a marinade just so good. Again those dried packets are not my thing so I figured there had to be a fresh recipe out there! After a little recipe research and trial and error I think this is pretty awesome! I think it’s the fresh garlic and the pecorino that makes it! Whichever it is makes me HAPPY! Italian Dressing 3/4 cup light oil (extra light olive or vegetable oil etc… it needs to be mild!) 1/4 cup red wine vinegar 1 teaspoon kosher salt 1…

  • Roasted Sausage & Tomatoes

ROASTED SAUSAGE WITH TOMATOES This may be my most favorite “non-recipe” recipe ever. So good for a quick week night dinner and you can alter it so many ways with what you have on hand! Also quite perfect to cook up and drop at a friend’s house that might be in need of a good meal! I learned this from Jamie Oliver (his books are fabulous), and have taken his recipe and simplified it. Sorry guys, this is a no exact measurements wing it recipe! 1 pound sausage, I like uncooked chicken sausage from the meat counter but pork is great too. You can go spicy, sweet Italian or one…

  • Ranch Dressing Powder

We LOVE ranch dressing in this house… Carrot sticks, chicken nuggets, coleslaw… I could go on. But I don’t love what’s in that bottle or what’s in the little packet. So I set out to figure out how to make my own “packet” so we can have homemade ranch any time! Here is what you need: INGREDIENTS: 1/3 cup dry buttermilk (I found mine at Whole Foods but most stores have this in the baking aisle- stick in fridge after you open!) 2 Tablespoons dried parsley 1 1/2 Teaspoons dried dill weed 2 Teaspoons garlic powder 2 Teaspoons onion flakes or granulated onion 1 Teaspoon ground black pepper 1 Teaspoon…

  • Plum BBQ Sauce

BBQ sauce is surprisingly easy to throw together and even easier to customize with your favorite flavors. I also love that you can control the sugar if you make it yourself… not everything needs copious amounts of sugar. I will leave that for cake and ice cream. I had some plums sitting out as well as some tomatoes so I started from there! You could easily play with the ingredients, use a different stone fruit or add coffee, maybe some chili peppers, whatever your favorites are! Here you go: 3 Cups Chopped plums 1 Cup Chopped tomatoes 1 Medium red onion chopped 4 Garlic cloves crushed 4 Tablespoons of brown…
