    Artichoke & Tahini Dressing/Sauce/Slather/Dip… “Everything Sauce” I’m not even sure what to call this creation. It spawned from a recipe from the new Food52 book Mighty Salads, I changed a few things (naturally) to suit my taste buds. What I got was an earthy, smokey, sweet & spicy jar of awesome. I toss it with roasted vegetables (broccoli and sweet potatoes being my favorite!), spread it on toast with avocado, stir into hot lentils/grains, thin with water to make it a salad dressing (think hearty greens like kale) or dip chips into it!     Ramps pop up in grocery stores in the Spring for a short window of time- they are delightful! I think this recipe gives you a lot of bang for your buck! RAMP PESTO One bunch of ramps 1/2 cup pistachios 1/2 cup grated pecorino Romano 1/3 cup olive oil (or more if too dry) Sea salt Pepper Juice of half a lemon Wash and trim the ends of your ramps.     I LOVE making a really flavorful condiment at the start of a week and adding it to dishes all week long. This is a bright and super flavorful sauce that is great on tacos, eggs, mixed into a salad dressing or even to top a burger!
