    Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner!     I can barely even take any credit for this dressing. I planned to make “Jalapeño – Lime Dressing” from Kathryne Taylor’s new book LOVE REAL FOOD but the store was out of jalapeños… but they did have a can of chipotle in adobo sauce. I figured I’d give the swap a shot;  it was smokey and tart and just awesome! Delightful happy accident!     Artichoke & Tahini Dressing/Sauce/Slather/Dip… “Everything Sauce” I’m not even sure what to call this creation. It spawned from a recipe from the new Food52 book Mighty Salads, I changed a few things (naturally) to suit my taste buds. What I got was an earthy, smokey, sweet & spicy jar of awesome. I toss it with roasted vegetables (broccoli and sweet potatoes being my favorite!), spread it on toast with avocado, stir into hot lentils/grains, thin with water to make it a salad dressing (think hearty greens like kale) or dip chips into it!     Ramps pop up in grocery stores in the Spring for a short window of time- they are delightful! I think this recipe gives you a lot of bang for your buck! RAMP PESTO One bunch of ramps 1/2 cup pistachios 1/2 cup grated pecorino Romano 1/3 cup olive oil (or more if too dry) Sea salt Pepper Juice of half a lemon Wash and trim the ends of your ramps.     I LOVE making a really flavorful condiment at the start of a week and adding it to dishes all week long. This is a bright and super flavorful sauce that is great on tacos, eggs, mixed into a salad dressing or even to top a burger!     Who remembers that packet of Italian dressing you made in a shaker bottle? I love, love, loved it! On greens, pasta salads or even a marinade just so good. Again those dried packets are not my thing so I figured there had to be a fresh recipe out there! After a little recipe research and trial and error I think this is pretty awesome!     We LOVE ranch dressing in this house… Carrot sticks, chicken nuggets, coleslaw… I could go on. But I don’t love what’s in that bottle or what’s in the little packet.
