Tangy Lime Dressing

We love a taco around here… and I love being able to make a vegetable side for tacos (or to put in tacos!) which my kids will actually eat!

Coleslaw or a chopped kale salad is always a win! This dressing is PERFECT on cabbage or shredded kale… even raw brussel sprouts. Actually, a raw broccoli salad with a little red onion would be awesome too!

Don’t forget it as a marinade… I threw some on chicken for the grill tonight- so good!

 

Tangy Lime Dressing

  • Difficulty: easy

Ingredients:

  • 1/4 Cup olive oil
  • Juice of 2 limes
  • 2 Tablespoons Mayonnaise
  • 1/2 teaspoon of cumin
  • 1 clove of garlic, minced (I run through a garlic press)
  • Large squeeze of honey
  • Salt & Pepper to taste

Instructions:

  1. Mix all ingredients together in a jar, whisking well to combine.
  2. Pour and toss with your favorite greens or thin sliced raw vegetable!
  3. Enjoy!
