    We are taking off for February break tomorrow and are lucky enough to be venturing somewhere warmer than the North East. We are SO excited! That travel day… it can be daunting right?     Behold the mighty Instant Pot. If you follow me on social media then you are aware that I love it… I mean, okay, it is bordering on an obsession. My Brother and Sister-In-Law gave me the Instant Pot DUO80 for Christmas and I could not wait to get back home to use it.       Most asked question? Of me anyways… “What is your favorite cookbook?” That is a TOUGH question. I could never pick ONE favorite… I have a cookbook obsession. I have A LOT of cookbooks. Truthfully, I read them like I read novels. I am quite content to curl up on the couch with a cookbook and read. It could be a brand new purchase, one checked from the library or one I have had for years. I love them.     Egg Salad with Persian Cucumbers & Everything But The Bagel Salt I created this one day when I was STARVING without lunch prepared, in a rush, a car full of groceries and with a sleeping kid in the car. I was able to make this in the time it took me to unload the groceries from the car! The star is my Everything But The Bagel Salt seasoning.       I will be honest. New Year’s Eve is not my favorite “Holiday”. So much build up and pressure to have plans for the night and have all of these resolutions in order to have a bright and shiny new year. No thank you. I do LOVE new chapters, fresh beginnings, a reset. So I take it as that. A great time to refocus and turn in a little bit.
