Chipotle – Lime Dressing 

I can barely even take any credit for this dressing. I planned to make “Jalapeño – Lime Dressing” from Kathryne Taylor’s new book LOVE REAL FOOD but the store was out of jalapeños… but they did have a can of chipotle in adobo sauce. I figured I’d give the swap a shot;  it was smokey and tart and just awesome! Delightful happy accident!


Chipotle – Lime Dressing

1/2 cup olive oil

1/2 cup lime juice

1/2  to 1 whole chipotle pepper in adobo sauce. Depends on your desired heat level.

1 tablespoon honey

1 teaspoon ground cumin

1/2 teaspoon Dijon mustard

1 garlic clove smashed

1/4 teaspoon Sea Salt
Combine all ingredients in a blender and process until very smooth. Check for seasonings and add more salt and oil as needed.


Perfect for a taco salad… or whatever else you can come up with! I am going to try it on a watermelon feta salad!
