Italian Dressing

Who remembers that packet of Italian dressing you made in a shaker bottle? I love, love, loved it! On greens, pasta salads or even a marinade just so good. Again those dried packets are not my thing so I figured there had to be a fresh recipe out there! After a little recipe research and trial and error I think this is pretty awesome! I think it’s the fresh garlic and the pecorino that makes it! Whichever it is makes me HAPPY!

Italian Dressing

3/4 cup light oil (extra light olive or vegetable oil etc… it needs to be mild!)
1/4 cup red wine vinegar

1 teaspoon kosher salt

1 clove garlic

1 teaspoon honey

2 tablespoons grated pecorino cheese

Fresh ground pepper

Add all ingredients to a blender and blend until the garlic is fully minced and incorporated. Alternatively you could mince the garlic clove into a paste and add all the ingredients to a jar and whisk well- hard to get that honey mixed in!

Keep in tight covered jar in the fridge!
