• Quick Peanut Sauce

I have had a lot of requests for the recipe for this peanut sauce that I throw together so I finally measured it out! I love having this on hand for those awesome vegetable rolls I buy at the grocery or for any grilled meat. Soba noodles (or zoodles) pair perfectly with it and thinly sliced cucumbers and carrots tossed with it make a pretty fabulous salad. I like how this all comes together in one bowl… and I’m lazy and use garlic powder which omits the cutting board and knife (and truly blends in better too!). Quick Peanut Sauce Ingredients: 1 Cup smooth natural peanut butter (I like Teddies)…

  • Easy Blender Banana Muffins (gluten free!)

Summer. I’m all for the EASIEST and FASTEST recipes when all you want is to get out an enjoy the outdoors. My kids love a morning muffin and I love the ease of mixing it all together in a blender. The base of these are banana and oats but you can add in whatever you can think of! We went for blueberry, blueberry almond, chocolate chip, & chocolate chip almond! EASY BLENDER BANANA MUFFINS (gluten free!) • Point Sur X J. Crew

My apologies for being behind on blog posts. While I am working out this SIBO (small intestine bacterial overgrowth… lovely. I will do a post on it in the future)  with Low FODMAPS diet situation, my meals have been boring, redundant and not always that colorful… I have not had any inspirations for new recipes as of late. That said, I am actually excited to have been diagnosed with SIBO (yesterday!) so I can move on with treatment and get back to cooking! The other thing that has been all consuming, although exciting and fun, is our house renovation. I  have spent so much time looking at tile, lighting, paint…

  • Kale Salad For A Crowd

Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner! You can dress it before you go, too; it makes it super easy. It also happens to be low fodmap friendly (obviously), and vegan as well! You can certainly scale back the size to just feed your family for the night. I’ve thrown in some chicken or grilled shrimp for a complete dinner. Kale Salad with Maple Mustard…

  • Basil – Spinach Pesto (dairy free)

Sooooo I have not been cooking all that much these past few weeks. We are trying to sift through some health stuff and our diet has been a bit restricted. Besides my current Low FODMAP Diet (oh how I miss shiitakes, cauliflower and YOGURT!!!) we have our child on an elimination diet. He has TERRIBLE eczema so we are trying to get to the root of it. An elimination diet is painful… for both parent and child! So when you have to be dairy free, egg free, gluten free, soy free, corn free, nightshade free, peanut free, pork free, beef free and citrus free it can be… well… tricky to…

  • Super Seedy Overnight Oats

Oh overnight oats, you are so miraculous in the morning! I am always lazy about putting them together the night before but so grateful that I have done it when I am rushed the next day! Normally I will do a little assembly line of these and make them for everyone for a few days. Such an easy breakfast! I have tried lots of variations of overnight oats and I love the extra nutritional boost from the flax and chia here. I’ve made these dairy free but feel free to use your favorite milk here! Ingredients 1/2 cup rolled gluten free oats 1/2 cup unsweetened almond milk 1 teaspoon to…
