    Okay… so this isn’t really pudding. It’s an overnight oats recipe, but my kids call it “breakfast pudding” so that’s what I’m going with. Such an easy recipe. Make a batch in individual jars at the start of the week and you are good to go for a few days! The key is the Special Dark Cocoa Powder (who else loved that miniature Hershey’s bar when they were a kid?) – it makes it that much more decadent.     This is a classic. My mom and I have been making it for years and I always make it the same day I make gazpacho. Cusinart is already out and you have leftover pepper and onion. Easy peasy.     I have had a lot of requests for the recipe for this peanut sauce that I throw together so I finally measured it out! I love having this on hand for those awesome vegetable rolls I buy at the grocery or for any grilled meat. Soba noodles (or zoodles) pair perfectly with it and thinly sliced cucumbers and carrots tossed with it make a pretty fabulous salad.     Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner!     I have received several requests for how I make steel cut oats in the Instant Pot, so here you go! This method stems from Melissa Clark’s recipe in her (AMAZING) cookbook, Dinner In An Instant.     I love black beans. Love them!  I have found them to be a little trickier to make at home than any other bean. Why? Who knows. It has just been difficult to achieve that perfect inky soft bowl of beans we get at our favorite taco joint. Since the Instant Pot seems to be able to do no wrong I thought I would give it a whirl.
