• Cocktails: Quaranita

    I came up with this one on our rocking Saturday night… I don’t care for super sweet drinks so this was perfect for me. Feel free to add a little simple syrup if desired! You can easily reduce the recipe down to one or two cocktails or save the leftover juice/tequila mixture in a mason jar in the fridge for the next night!  Also, in case you missed it in my March Favorites post; I have found a liquor delivery service that is SO EASY, and purchases from local stores!     Okay… who is with me on the hunger… all… day… long? I mean it must be boredom? Stress? Right? Any which way… I keep eating chocolate chips… by the handful. But what I really wanted was cookie dough. And perhaps it would be nice if it had some redeeming qualities like healthy fats… I knew I could cobble together some kind of grain free treat with the remainder of my bag of almond flour… this frozen “cookie dough” hits the spot!     While not exactly a new trend, leather is EVERYWHERE and I am in to it! I have been trying to find a pair of leather leggings… do I bite the (very big dollar) bullet and go real or find a great pair of faux… or as I am seeing everywhere “Vegan Leather”.     I can not believe it is the end of March. The temperature is actually starting to rise. The birds are chirping,  the flowers are trying to peek out and Spring Break is around the corner!   • Dark Chocolate Breakfast Pudding

    Okay… so this isn’t really pudding. It’s an overnight oats recipe, but my kids call it “breakfast pudding” so that’s what I’m going with. Such an easy recipe. Make a batch in individual jars at the start of the week and you are good to go for a few days! The key is the Special Dark Cocoa Powder (who else loved that miniature Hershey’s bar when they were a kid?) – it makes it that much more decadent.     Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner!     I have received several requests for how I make steel cut oats in the Instant Pot, so here you go! This method stems from Melissa Clark’s recipe in her (AMAZING) cookbook, Dinner In An Instant.     Does anyone remember that expression “it’s not like I’m sitting around all day eating bonbons?” Was that only something my grandmother and mother said? I’ve always wondered what a bonbon is exactly; per Webster it is “a candy with chocolate or fondant coating and fondant center that sometimes contains fruits and nuts.
