    While not exactly a new trend, leather is EVERYWHERE and I am in to it! I have been trying to find a pair of leather leggings… do I bite the (very big dollar) bullet and go real or find a great pair of faux… or as I am seeing everywhere “Vegan Leather”. That makes me chuckle for some reason. Upgraded from faux leather?     I can not believe it is the end of March. The temperature is actually starting to rise. The birds are chirping,  the flowers are trying to peek out and Spring Break is around the corner!   • Dark Chocolate Breakfast Pudding

    Okay… so this isn’t really pudding. It’s an overnight oats recipe, but my kids call it “breakfast pudding” so that’s what I’m going with. Such an easy recipe. Make a batch in individual jars at the start of the week and you are good to go for a few days! The key is the Special Dark Cocoa Powder (who else loved that miniature Hershey’s bar when they were a kid?) – it makes it that much more decadent.     Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner!     I have received several requests for how I make steel cut oats in the Instant Pot, so here you go! This method stems from Melissa Clark’s recipe in her (AMAZING) cookbook, Dinner In An Instant.     Who out there has tried Thrive Market yet? I swear I signed up for an account over a year ago and never ordered. Something about membership fees always gets me.     I love black beans. Love them!  I have found them to be a little trickier to make at home than any other bean. Why? Who knows. It has just been difficult to achieve that perfect inky soft bowl of beans we get at our favorite taco joint. Since the Instant Pot seems to be able to do no wrong I thought I would give it a whirl.
