• Sweet Potato Tortillas

OMG. I made tortillas out of sweet potato. And they were SO GOOD. These are actually so very easy with a short ingredient list. Added bonus you can add so many accent flavors! Lime zest and roasted garlic, cumin and chili or even maple syrup and cinnamon! The possibilities are endless! We had these with beef tacos, chicken tacos and then I had a turkey wrap for lunch with my amazing Homemade “Deli” Turkey (in the Instant Pot!)- so good! Next up I’m going to use for a breakfast wrap! Ingredients: 2 Cups mashed sweet potato (I quick cook mine in the Instant Pot but you can boil or bake…

  • Cinnamon Coffee Cake- paleo!

A perfect Paleo, kid-friendly cinnamon coffee cake for the weekend. It all comes together in the food processor which makes it super easy. I always opt to use the food processor when I can. It incorporates the ingredients so well! (This is the one I have here!) Ingredients: Coffee Cake 2½ cups blanched almond flour (not almond meal- I like Trader Joe’s brand!)  ½ teaspoon baking soda  ¼ teaspoon sea salt 3 large eggs ½ cup maple syrup ¼ cup melted coconut oil 1 teaspoon vanilla 1/2 teaspoon cinnamon Cinnamon Sugar Swirl  ¼ cup coconut oil, melted  ¼ cup coconut sugar  2 tablespoons ground cinnamon Instructions: Preheat oven to 350.…

  • Homemade “Deli” Turkey

I posted yesterday in my Instagram Stories that I was attempting to make my own deli style turkey for sandwiches using none other than my Instant Pot. Yes, yes, I am completely obsessed with that contraption. It is amazing… no ifs ands or buts. (Read my review here.) Anyway, the response to the turkey instastory was exuberant and large! I get it. Sandwiches are such an easy thing to pack for lunches, both school and work and sometimes deli meat is, well, scary. I mean what’s really in it? And if you go for the organic stuff it is so expensive! This is so extremely easy and you can flavor…

  • Kale Salad For A Crowd

Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner! You can dress it before you go, too; it makes it super easy. It also happens to be low fodmap friendly (obviously), and vegan as well! You can certainly scale back the size to just feed your family for the night. I’ve thrown in some chicken or grilled shrimp for a complete dinner. Kale Salad with Maple Mustard…

  • Grain Free Apple Cider Donuts

As we continued on our grain free adventure, the kids NEEDED a breakfast treat. Enter the amazing Bob’s Red Mill Paleo Baking Flour. Everything I have made with it has been A+. We have been making awesome pancakes; actually this batter doubles as a pancake batter and has become a staple around here on the weekends, but donuts were really the request. So off I went to buy a donut pan and create a breakfast treat! Apple cider donuts are always a favorite in the Fall and I had some cider in my fridge… see what happened there? The kids LOVED helping with these, especially the sprinkling of the cinnamon sugar…

  • Chocolate Cashew Butter “Bonbons”

Does anyone remember that expression “it’s not like I’m sitting around all day eating bonbons?” Was that only something my grandmother and mother said? I’ve always wondered what a bonbon is exactly; per Webster it is “a candy with chocolate or fondant coating and fondant center that sometimes contains fruits and nuts. Or something that is pleasing in a light or frivolous way”. So these little treats definitely qualify for both of those definitions. They are a healthier version with no refined white sugar. They are gluten and grain free and also paleo if you choose the right chocolate chips – this brand is good for Paleo. The dates bring a…
