• Summer Salads: My New Staple

    I have had a lot of questions and requests for what this salad is… probably because I constantly post it… because yes, I really am eating it every day. This salad all starts with Alison Roman’s ” Secret Ingredient Pasta”, that I am now making WEEKLY. It is just that good, and the leftovers mixed with vinegar soaked curly kale are even better.   • Mint Chia Dressing

    I LOVE to add fruit to my salads in the Summer. Nectarines, peaches and watermelon are abundant and pair so well with greens – match made in heaven! I created this dressing for those fruit filled salads… I promise it is not overly “minty”, but a great compliment to the sweet fruit!   • Basil Thyme Vinaigrette

    I love the start of Summer for many reasons… but one of my most favorite reasons is that my dad’s garden is abundant with lettuce. His favorite to grow is Simpson and it is SO good! There is nothing like a salad made with fresh cut lettuce. But, the dressing has to be equally as good. If you’ve been a reader for a while you know I prefer to make my own salad dressings, I think this may be my new all time favorite! Bursting with herby flavor, it is a Summer home run.   

  • Tangy Lime Dressing

    We love a taco around here… and I love being able to make a vegetable side for tacos (or to put in tacos!) which my kids will actually eat! Coleslaw or a chopped kale salad is always a win! This dressing is PERFECT on cabbage or shredded kale… even raw brussel sprouts. Actually, a raw broccoli salad with a little red onion would be awesome too!     A little magic tahini salad dressing to start the weekend off right. Today I’m heading out for a long weekend on a girl’s trip (how lucky am I? More on the trip later!) so I thought I’d stock the fridge/freezer up a bit for my family.  So besides ice cream, hamburgers and other treats I have our favorite Easy Chicken Parmesan and Pork Ragù ready to be reheated along with loads of fresh lettuce and this dressing.   • Kale Salad For A Crowd

    Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner! You can dress it before you go, too; it makes it super easy. It also happens to be low fodmap friendly (obviously), and vegan as well!
