• Tuscan Kale Soup

So here is my version of Tuscan Soup. I feel like it is all over Pinterest and Instagram right now so I wanted to try my own version of it. Paleo Tuscan Soup… in the Instant Pot! I went the route of making my own sausage (sort of) but you could for sure use store bought (raw) Italian sausage, chicken, turkey or pork, if you don’t have the Primal Palate spices. BUT GET THE SPICES! They are amazing and I also use them in my simple Pork Ragu recipe!  It is SO easy! Tuscan Kale Soup Ingredients: 2 Tablespoons of olive oil 1 Sweet onion chopped 4 Garlic cloves minced…

  • Chicken & Sweet Potato Chili

Fall is here despite what the temperature outside may be! I am ready for super easy, delicious & warming dinners. In comes my best kitchen gadget, the Instant Pot.  This genius little appliance makes quick work of 5 ingredients (yes FIVE! Okay, 6 with the bay leaf… and salt and pepper just don’t count!) and puts a chili on your table in about an hour start to finish. And it tastes like it has been on the stove for hours! Chicken & Sweet Potato Chili (Serves 8-10, freezes well) Ingredients: 3-4 lbs Boneless, skinless chicken thighs; trimmed 4 Cups cubes sweet potatoes (I leave the skin on) 2 Cups salsa…

  • Sweet Potato Tortillas

OMG. I made tortillas out of sweet potato. And they were SO GOOD. These are actually so very easy with a short ingredient list. Added bonus you can add so many accent flavors! Lime zest and roasted garlic, cumin and chili or even maple syrup and cinnamon! The possibilities are endless! We had these with beef tacos, chicken tacos and then I had a turkey wrap for lunch with my amazing Homemade “Deli” Turkey (in the Instant Pot!)- so good! Next up I’m going to use for a breakfast wrap! Ingredients: 2 Cups mashed sweet potato (I quick cook mine in the Instant Pot but you can boil or bake…

  • Primal Palate Rice & Chicken in the Instant Pot

I love Primal Palate Spice blends- gluten free, non GMO, Whole 30 approved, ORGANIC… the list goes on and on. They are such a great company and they really make it easy to pull a flavorful dinner together FAST. I have been playing around with their blends for a while now and have finally perfected Chicken and Rice in the Instant Pot.  The best part of this recipe is that you can use any of their blends and then adjust the vegetables and toppings to suit the flavor profile. A one pot wonder! My favorite is the Super Gyro that is used in this recipe… and wait, also the Adobo.…

  • Smoky Turkey Chili (No beans!)(In the Instant Pot!)

Okay all my Instant Pot fans… this is SO GOOD. And so very perfect for these blustery cold days. It is FRIGID where I live! Who doesn’t crave comfort food in the winter? This is also a perfect recipe for a Super Bowl upcoming shindig- who are you rooting for? Sometimes we are pro bean in this household… sometimes anti. So I love that this is a no bean chili that gets bulked up a bit with addition of zucchini (I promise your kids won’t know it’s there!). When you peel and seed the zucchini it allows it to break down and become for of a thickener to the chili. It’s…

  • Homemade “Deli” Turkey

I posted yesterday in my Instagram Stories that I was attempting to make my own deli style turkey for sandwiches using none other than my Instant Pot. Yes, yes, I am completely obsessed with that contraption. It is amazing… no ifs ands or buts. (Read my review here.) Anyway, the response to the turkey instastory was exuberant and large! I get it. Sandwiches are such an easy thing to pack for lunches, both school and work and sometimes deli meat is, well, scary. I mean what’s really in it? And if you go for the organic stuff it is so expensive! This is so extremely easy and you can flavor…

  • What to make for dinner when you are exhausted…

Okay guys, final blog post for 2018! I figured I better make it a good one and what is better than 3 super easy, “barely a recipe” dinners? So here is the thing. I am tired. So very tired. No one really talks about the exhaustion that can come along with grief. I think the exhaustion is because grief is just all consuming, ever present and painful. There is space for nothing else. I have been doing my best to cut myself some slack, keep expectations low and just focus on keeping my family moving along. I was so incredibly fortunate to have meals delivered by my friends every night for an…

  • Butternut Squash Soup with Curry & Sumac (In the Instant Pot!)

My sweet husband whisked me away for a couple of nights in the city to decompress. We had a lovely relaxed time (more on that in a separate post!) and incredible meals. At one dinner we had a roasted squash side dish that was out of this world… I decided I had to try and recreate the flavor profile in a soup. I have never cooked with Sumac but it adds an earthy brightness that I am so excited about! All made (quickly) in the Instant Pot which makes it so easy. If you have not read my post about why I LOVE the Instant Pot you can find it…

  • Make Ahead Breakfasts

Okay… summer is now over (unofficially). That Tuesday after Labor Day always seems to be the day despite what the lunar calendar says. The melee sets in; back to school, back to work, back to life. It can be hard to get out the door in the morning (or sit to write a blog post!), am I right? I pulled together my favorite recipes that you can make a head and get you and/or your kids out the door even faster without the headache! Muffins: So easy to make ahead and keep on the counter or better yet, in the freezer! Make a double batch while you are baking! All of…
