• Homemade “Deli” Turkey

I posted yesterday in my Instagram Stories that I was attempting to make my own deli style turkey for sandwiches using none other than my Instant Pot. Yes, yes, I am completely obsessed with that contraption. It is amazing… no ifs ands or buts. (Read my review here.) Anyway, the response to the turkey instastory was exuberant and large! I get it. Sandwiches are such an easy thing to pack for lunches, both school and work and sometimes deli meat is, well, scary. I mean what’s really in it? And if you go for the organic stuff it is so expensive! This is so extremely easy and you can flavor…

  • What to make for dinner when you are exhausted…

Okay guys, final blog post for 2018! I figured I better make it a good one and what is better than 3 super easy, “barely a recipe” dinners? So here is the thing. I am tired. So very tired. No one really talks about the exhaustion that can come along with grief. I think the exhaustion is because grief is just all consuming, ever present and painful. There is space for nothing else. I have been doing my best to take cut myself some slack, keep expectations low and just focus on keeping my family moving along. I was so incredibly fortunate to have meals delivered by my friends every night for…

  • Butternut Squash Soup with Curry & Sumac (In the Instant Pot!)

My sweet husband whisked me away for a couple of nights in the city to decompress. We had a lovely relaxed time (more on that in a separate post!) and incredible meals. At one dinner we had a roasted squash side dish that was out of this world… I decided I had to try and recreate the flavor profile in a soup. I have never cooked with Sumac but it adds an earthy brightness that I am so excited about! All made (quickly) in the Instant Pot which makes it so easy. If you have not read my post about why I LOVE the Instant Pot you can find it…

  • Make Ahead Breakfasts

Okay… summer is now over (unofficially). That Tuesday after Labor Day always seems to be the day despite what the lunar calendar says. The melee sets in; back to school, back to work, back to life. It can be hard to get out the door in the morning (or sit to write a blog post!), am I right? I pulled together my favorite recipes that you can make a head and get you and/or your kids out the door even faster without the headache! Muffins: So easy to make ahead and keep on the counter or better yet, in the freezer! Make a double batch while you are baking! All of…

  • Steel Cut Oats in the Instant Pot

I have received several requests for how I make steel cut oats in the Instant Pot, so here you go! This method stems from Melissa Clark’s recipe in her (AMAZING) cookbook, Dinner In An Instant. Super simple, hearty and delicious. They are perfectly creamy without the addition of milk, great for those of you who are dairy free. I always make a large batch and reheat them all week long.  If you do not have an Instant Pot yet, I love this one. And here is my review of why I think it is just so fantastic. Ingredients 1 Tablespoon coconut oil, ghee or butter if not dairy free 1…

  • Chicken Taco Chili in the Instant Pot

So this is not the fanciest recipe… or the prettiest. But it is super delicious, super fast and super easy. Hard not to love a family friendly recipe that has those attributes! And, it’s five ingredients, FIVE!!! And we all know how much I love the Instant Pot! Read my review here if you haven’t already! We enjoy ours with taco toppings and tortilla chips! Ingredients: 6 Boneless skinless chicken breasts 2 15 oz cans pinto beans, rinsed 1 16 oz jar of salsa (I love this one) 1 Bottle of beer (I used gluten free Red Bridge) 2 Teaspoons Adobo seasoning (I LOVE Primal Palate which you can buy…

  • Thrive Market Review

Who out there has tried Thrive Market yet? I swear I signed up for an account over a year ago and never ordered. Something about membership fees always gets me. Yes, it is like Costco, but I always hesitate. I did the same thing with Beachbody. I waited forever and we all know how that turned out. So, my advice to you is DO IT. Don’t wait like I did. I think it may just be the best online source out there for natural and organic products! My first box arrived this weekend and it was packed perfectly. Glass jars intact, delicate pasta noodles still perfectly whole in their box,…

  • Black Beans in the Instant Pot

I love black beans. Love them!  I have found them to be a little trickier to make at home than any other bean. Why? Who knows. It has just been difficult to achieve that perfect inky soft bowl of beans we get at our favorite taco joint. Since the Instant Pot seems to be able to do no wrong I thought I would give it a whirl. We are not huge heat lovers in this house so I like to make things mild and add hot sauce after the fact to taste. Feel free to add some jalapenos here to bring the heat you want. There are a few steps…

  • Homemade Yogurt in the Instant Pot

Homemade yogurt. Never would I ever have thought I would be making homemade yogurt. Now… well now, I can never go back to buying it at the store! Who knew how easy it was to make? I use my Instant Pot DUO 80to make it and the process is surprisingly simple. There are a few steps to getting it right but once you get the hang of it it is easy. We like whole milk yogurt as a family so I use organic whole milk but I am sure low-fat milk would work as well. Also coconut milk and soy milk, but I have yet to try those out! I…
