• Sweet & Spicy Pecans

Okay, is it just me or do the Holidays seem like a full on contact sport this year? So much to do and everyone is in a rush! I almost got slammed backing out of a parking spot today… It makes me want to hole up in my house watch Christmas movies and bake all things Christmas! These nuts fit nicely into that category! My mom used to make something similar as a kid and I loved them. I can’t take credit for these delicious pecans, I found the recipe on Smitten Kitchen (she is fabulous… check her out! Her latest cookbook made my November Favorites and My Holiday Wishlist!)…

  • Tuscan Kale Soup

So here is my version of Tuscan Soup. I feel like it is all over Pinterest and Instagram right now so I wanted to try my own version of it. Paleo Tuscan Soup… in the Instant Pot! I went the route of making my own sausage (sort of) but you could for sure use store bought (raw) Italian sausage, chicken, turkey or pork, if you don’t have the Primal Palate spices. BUT GET THE SPICES! They are amazing and I also use them in my simple Pork Ragu recipe!  It is SO easy! Please note: A Modern Housewife LLC has affiliate relationships with multiple brands. A Modern Housewife LLC will…

  • Cocktails: Habanero Harvest

A warming, spiced and spicy cocktail, sign me up! A simple syrup made with classic Fall flavors and a habanero gives you an earthy and spicy base for this fun Fall drink. Halloween parties, Thanksgiving gathering… or just a Friday night! I went with tequila here because it is my favorite but you could also use mezcal, bourbon, vodka or even a spiced rum! One word of caution, habaneros can be HOT. I first made this allowing the habanero to soak for 15 minutes… good but very spicy. I went back and reduced the time to 5 minutes, but if you like it hot adjust accordingly! The syrup would also…

  • Baked French Toast (Gluten Free)

This recipe all started because I felt insanely wasteful throwing away the heels of a loaf of bread (usually 4 pieces!) because no one would eat them. The end of a gluten free sandwich loaf if not like scoring the end of a French baguette after all (yes, I miss a French baguette!). So I started saving the heels in the freezer… what could I make? A baked French toast seemed perfect! Honestly, you can just buy a loaf and use that… but I am saving my heels for this recipe! This recipe is written for gluten free bread which absorbs liquid differently than traditional wheat bread, if you want…

  • Tahini Dressing

A little magic tahini salad dressing to start the weekend off right. Today I’m heading out for a long weekend on a girl’s trip (how lucky am I? More on the trip later!) so I thought I’d stock the fridge/freezer up a bit for my family.  So besides ice cream, hamburgers and other treats I have our favorite Easy Chicken Parmesan and Pork Ragù ready to be reheated along with loads of fresh lettuce and this dressing. What’s an easier vegetable side than a salad? Not much. Throw in some cucumber, chopped tomatoes and an avocado and you are good to go. I nailed down the recipe for this tahini…

  • Chicken & Sweet Potato Chili

Fall is here despite what the temperature outside may be! I am ready for super easy, delicious & warming dinners. In comes my best kitchen gadget, the Instant Pot.  This genius little appliance makes quick work of 5 ingredients (yes FIVE! Okay, 6 with the bay leaf… and salt and pepper just don’t count!) and puts a chili on your table in about an hour start to finish. And it tastes like it has been on the stove for hours! Chicken & Sweet Potato Chili (Serves 8-10, freezes well) Ingredients: 3-4 lbs Boneless, skinless chicken thighs; trimmed 4 Cups cubes sweet potatoes (I leave the skin on) 2 Cups salsa…

  • Easy Banana Blueberry Muffins

I may have gotten my kids to end their long loathing of blueberries… seriously, who hates blueberries? They are so sweet and delicious! Granted, I have a serious love of blueberry muffins that stems from childhood Sundays (thanks, Dad!). I figured if I tucked blueberries into Thad’s Banana Bread and turned them into muffins they couldn’t really complain… I was right! Perfect for a lazy Sunday and then for a rushed Monday morning! Enjoy!   Easy Banana Blueberry Muffins (Makes 12) Ingredients: 3 to 4 Very ripe bananas (lots of dark spots & amount depends on how big the banana is! ) 1 1/2 Cup gluten free flour (I like…

  • S’mores Oreo Bark

Are you looking for an easy no bake Summer (or any season!) sweet treat that both kids AND adults will love? Look no further. This recipe is the bomb.   S’mores Oreo Bark Ingredients: 3 1/2 Cups dark chocolate chips or chopped dark chocolate pieces 1/2 Cup white chocolate chips or chopped white chocolate pieces 1 Cup marshmallow Fluff 12 Oreos (for gluten free I like Glutino) 4 Graham Cracker Sheets (for gluten free I like Pamela’s) Instructions: Line a cookie sheet with parchment paper.
