    Apple crisp. Talk about a dessert that is a hit any season. Summer BBQ’s, Fall gatherings, Winter holidays and Spring brunches. This one is extra special with addition of bourbon, it adds a little more depth!  The gluten free topping is so buttery and delicious! Serving with vanilla ice cream is definitely encouraged.

    Week four, that seems really unbelievable. I read a great NY Times article last week about relaxing on the “To-Do List”; easing up on the need to feel productive. I couldn’t agree more.   • Best Ever Dark Chocolate Buttercream Frosting

    I finally mastered the perfect dark chocolate buttercream frosting! Not too sweet (yes, that is a thing), perfectly chocolaty and smooth! Super simple and very easy. This batch will frost a two layer 9 inch cake or 24 cupcakes with a little leftover… and you know what? You can freeze buttercream frosting! Seriously!     Remember those seriously easy peanut butter cookies that only had three ingredients? Well why can’t they be cashew butter? And while we are at it let’s make them paleo with coconut sugar instead!     I started with Smitten Kitchen’s recipe for Salted Peanut Butter Cookies and made some simple swaps.     Okay, is it just me or do the Holidays seem like a full on contact sport this year? So much to do and everyone is in a rush! I almost got slammed backing out of a parking spot today… It makes me want to hole up in my house watch Christmas movies and bake all things Christmas! These nuts fit nicely into that category!     A perfect Paleo, kid-friendly cinnamon coffee cake for the weekend. It all comes together in the food processor which makes it super easy. I always opt to use the food processor when I can. It incorporates the ingredients so well! (This is the one I have here!)   • Coconut Macaroons

    Coconut Macaroons. I think I first started making these for my in-laws for Passover early in our marriage. The first time I brought them my husband’s grandparents jubilantly stated that these were the best macaroons they had ever had. Ever. Coconut macaroons were their favorite cookie so they knew what they were talking about. Now I make them for the family for any holiday. They are so simple with only 5 ingredients and come together quickly.   I also think they make the perfect holiday “snowball” cookie and they make their way on to our Christmas Cookie plate.
