    I posted a photo on my Instagram Stories the other day of an old school Wild Rice Salad that I have made for YEARS. My DM inbox blew up with requests for the recipe. Okay, people love wild rice! Honestly, it is difficult to write this one up because I don’t measure for this one. I just make it with what I have around and taste as I go. The good news is it means this recipe is VERY flexible.   • Week Four Coronavirus Hiatus: Cut Yourself Some Slack

    Week four, that seems really unbelievable. I read a great NY Times article last week about relaxing on the “To-Do List”; easing up on the need to feel productive. I couldn’t agree more. We have enough pressure and stress on ourselves right now, do we REALLY need to have our house in perfect order too? Learn a new language (I laughed out loud)? Or learn how to make puff pastry from scratch?   If those things relax you then by all means become multilingual and clean out every last closet.     Alright, alright, alright… here we go, week three! How is everyone doing? Stir crazy? Hanging in? I have found that a daily (okay, almost daily) dose of exercise has been doing wonders over here. I have rounded up some great sources for workouts below… and don’t forget getting outside for a walk, run, bike ride… just please keep your distance from others!   • “Cookie Dough”

    Okay… who is with me on the hunger… all… day… long? I mean it must be boredom? Stress? Right? Any which way… I keep eating chocolate chips… by the handful. But what I really wanted was cookie dough. And perhaps it would be nice if it had some redeeming qualities like healthy fats… I knew I could cobble together some kind of grain free treat with the remainder of my bag of almond flour… this frozen “cookie dough” hits the spot!     We love a weekend pancake breakfast… I don’t love standing over the stove for a half hour and making my family wait to eat until my pancakes are done at the very end… know what I mean? So I thought, why can’t I just put the whole thing in the oven and make a “pan cake”- well, of course I can!     Happy New Year! I hope you have all gotten back on track after the holiday run and are ready for 2020! I am excited to see what this year will bring and how I can continue to grow this space.
