    I have had a lot of requests for the recipe for this peanut sauce that I throw together so I finally measured it out! I love having this on hand for those awesome vegetable rolls I buy at the grocery or for any grilled meat. Soba noodles (or zoodles) pair perfectly with it and thinly sliced cucumbers and carrots tossed with it make a pretty fabulous salad.     Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner! You can dress it before you go, too; it makes it super easy. It also happens to be low fodmap friendly (obviously), and vegan as well!   • Steel Cut Oats in the Instant Pot

    I have received several requests for how I make steel cut oats in the Instant Pot, so here you go! This method stems from Melissa Clark’s recipe in her (AMAZING) cookbook, Dinner In An Instant.
