  • Cashew Butter Cookies (Paleo!)

    Remember those seriously easy peanut butter cookies that only had three ingredients? Well why can’t they be cashew butter? And while we are at it let’s make them paleo with coconut sugar instead!     I started with Smitten Kitchen’s recipe for Salted Peanut Butter Cookies and made some simple swaps.     Coconut Macaroons. I think I first started making these for my in-laws for Passover early in our marriage. The first time I brought them my husband’s grandparents jubilantly stated that these were the best macaroons they had ever had. Ever. Coconut macaroons were their favorite cookie so they knew what they were talking about. Now I make them for the family for any holiday.     Every Christmas my family made sugar cookies. We had about 50 different cookie cutters, we each had our favorites (mine the dachshund!), and loads of sugar decorations. To me Christmas and sugar cookies go hand in hand. Since discovering that I have an intolerance to gluten we have tried many different mixes and recipes so we can still have our Christmas tradition… none of them produced the same delicious cookie we all loved.
