    Week four, that seems really unbelievable. I read a great NY Times article last week about relaxing on the “To-Do List”; easing up on the need to feel productive. I couldn’t agree more.     Okay… who is with me on the hunger… all… day… long? I mean it must be boredom? Stress? Right? Any which way… I keep eating chocolate chips… by the handful. But what I really wanted was cookie dough. And perhaps it would be nice if it had some redeeming qualities like healthy fats… I knew I could cobble together some kind of grain free treat with the remainder of my bag of almond flour… this frozen “cookie dough” hits the spot!     I finally mastered the perfect dark chocolate buttercream frosting! Not too sweet (yes, that is a thing), perfectly chocolaty and smooth! Super simple and very easy. This batch will frost a two layer 9 inch cake or 24 cupcakes with a little leftover… and you know what? You can freeze buttercream frosting! Seriously!     Graham crackers smothered in vanilla toffee & dark chocolate with a sprinkle of pecans… I really struggled to name this recipe… it is not a cookie. Is it bark? Is it candy?
