• Baked French Toast (Gluten Free)

This recipe all started because I felt insanely wasteful throwing away the heels of a loaf of bread (usually 4 pieces!) because no one would eat them. The end of a gluten free sandwich loaf if not like scoring the end of a French baguette after all (yes, I miss a French baguette!). So I started saving the heels in the freezer… what could I make? A baked French toast seemed perfect! Honestly, you can just buy a loaf and use that… but I am saving my heels for this recipe! This recipe is written for gluten free bread which absorbs liquid differently than traditional wheat bread, if you want…

  • Easy Banana Blueberry Muffins

I may have gotten my kids to end their long loathing of blueberries… seriously, who hates blueberries? They are so sweet and delicious! Granted, I have a serious love of blueberry muffins that stems from childhood Sundays (thanks, Dad!). I figured if I tucked blueberries into Thad’s Banana Bread and turned them into muffins they couldn’t really complain… I was right! Perfect for a lazy Sunday and then for a rushed Monday morning! Enjoy!   Easy Banana Blueberry Muffins (Makes 12) Ingredients: 3 to 4 Very ripe bananas (lots of dark spots & amount depends on how big the banana is! ) 1 1/2 Cup gluten free flour (I like…

  • Strawberry Orange Breakfast Cake

The local market here has a table tucked in the back for “last chance” fruits and vegetables. Very (VERY) ripe fruit and on their way out vegetables- perfect for baking (or soup making in the winter). The other day they had strawberries for $0.99 so I knew I needed to bake something! Cookie & Kate has a recipe for Lemony Blueberry Cake in her cookbook that I’ve been dying to try but my kids are still anti blueberry. In come the over ripe strawberries! This is a direct adaptation of her recipe just swapping out the flavors a bit. I felt like orange would go better with strawberries than lemon!…

  • Make Ahead Breakfasts

Okay… summer is now over (unofficially). That Tuesday after Labor Day always seems to be the day despite what the lunar calendar says. The melee sets in; back to school, back to work, back to life. It can be hard to get out the door in the morning (or sit to write a blog post!), am I right? I pulled together my favorite recipes that you can make a head and get you and/or your kids out the door even faster without the headache! Muffins: So easy to make ahead and keep on the counter or better yet, in the freezer! Make a double batch while you are baking! All of…

  • Easy Blender Banana Muffins (gluten free!)

Summer. I’m all for the EASIEST and FASTEST recipes when all you want is to get out an enjoy the outdoors. My kids love a morning muffin and I love the ease of mixing it all together in a blender. The base of these are banana and oats but you can add in whatever you can think of! We went for blueberry, blueberry almond, chocolate chip, & chocolate chip almond! EASY BLENDER BANANA MUFFINS (gluten free!) (Makes 12) Ingredients: 3 Ripe bananas 2 Cups gluten free rolled oats (I like Bob’s Red Mill) 2 Eggs 1/2 Cup real maple syrup 1/4 Cup milk (cow or almond) 1 tsp vanilla extract…

  • Thrive Market Review

Who out there has tried Thrive Market yet? I swear I signed up for an account over a year ago and never ordered. Something about membership fees always gets me. Yes, it is like Costco, but I always hesitate. I did the same thing with Beachbody. I waited forever and we all know how that turned out. So, my advice to you is DO IT. Don’t wait like I did. I think it may just be the best online source out there for natural and organic products! My first box arrived this weekend and it was packed perfectly. Glass jars intact, delicate pasta noodles still perfectly whole in their box,…

  • Double Chocolate Banana Muffins

Muffins. I grew up eating muffins every weekend. My dad would make the best muffins (out of a box, my favorite were the Duncan Hines Deluxe Blueberry Muffin… which they still make a version of, but sadly I can no longer eat! ).  We would enjoy them with eggs and bacon; it was the highlight of the weekend. So, it comes as no surprise that my kids love muffins too. I find that they are great weekday breakfast paired with fruit and yogurt if you make them with simple healthful ingredients. We can save the super fun treats for the weekends like my parents did. These also freeze well so you can…

  • Raspberry Compote

Raspberry Compote is the perfect topping for homemade yogurt. Or ice cream… or toast… or pound cake… or over goat cheese… or swirled into pancake batter. See where I am going here? It takes anything and elevates it; perfect for entertaining or just making Sunday morning breakfast a little more exciting! Bright, slightly sweet and so easy to make; this is a great recipe to have in your repertoire! Raspberry Compote 12 oz of raspberries (2 small containers or one of those big long ones) 1-3 Tablespoons of real maple syrup (all dependant oh how sweet you like it, if it was just for me I would do a heaping…
