    How is already midway through July? Time is flying! I have been quite quiet as we’ve been spending lots of time with family and to be honest I have been away from my computer, phone and social media; it has been fantastic!   • Easy Blender Banana Muffins (gluten free!)

    Summer. I’m all for the EASIEST and FASTEST recipes when all you want is to get out an enjoy the outdoors. My kids love a morning muffin and I love the ease of mixing it all together in a blender. The base of these are banana and oats but you can add in whatever you can think of!   • Kale Salad For A Crowd

    Memorial Day Weekend is the unofficial start of Summer- yay! It is also the start of all the fun potlucks and barbecues! We had a fun event last weekend, Comedy Night, where I brought a large enough kale salad to feed a crowd (20 people to be exact). This was a winner! You can dress it before you go, too; it makes it super easy. It also happens to be low fodmap friendly (obviously), and vegan as well!     Sooooo I have not been cooking all that much these past few weeks. We are trying to sift through some health stuff and our diet has been a bit restricted. Besides my current Low FODMAP Diet (oh how I miss shiitakes, cauliflower and YOGURT!!!) we have our child on an elimination diet. He has TERRIBLE eczema so we are trying to get to the root of it.     I love to read. I find it to be the ultimate escape, more so than tv or movies. So, for me, a book needs to be a real page-turner.
