    I am beat guys. I need a breather. The end of school is a real energy suck, am I right? This Monday also marked 9 months since I lost my brother. 9 months!   • Summer Grilled Chicken Parmesan

    This is barely a recipe but still worth posting! “Chicken Parm” is a staple in our house; sometimes I take short cuts with Bell & Evans GF Chicken Cutlets or Tenders, but this shortcut is even better. I had the grill hot and ready to go for Sunday afternoon burgers so I generously seasoned some chicken cutlets and grilled them up for a different take on chicken parm! It doesn’t hurt that this is a much lighter dish without the breading! Once the chicken is grilled it is as easy as assembling the dish and popping it in the oven!     After our Fall and Winter we really wanted to get away for a proper Spring Break. We needed some sunshine and some relaxation and not much else. But where to go? We rely heavily on Bermuda for getaways (why wouldn’t we!) but a friend recommended The Boca Beach Club, a Waldorf Astoria Hotel, when we couldn’t find anything else that peaked our interest.  Amazingly they had availability and the flights into West Palm Beach weren’t astronomical when we went to book… only two weeks ahead.
