    My oldest asked if we could make sloppy joes after flipping through a kid’s cookbook. Meat, check. Sauce, check. Bun, check. What more could a kid ask for?     Hash brown waffles. They are a thing and they are all over Pinterest and Instagram. We had to try them. Thad and I would have made these together (and loved them). We had a mutual love for McDonald’s hash browns (come on, you know they are THE BEST) starting at an early age.   • Sweet Potato Tortillas

    OMG. I made tortillas out of sweet potato. And they were SO GOOD. These are actually so very easy with a short ingredient list. Added bonus you can add so many accent flavors! Lime zest and roasted garlic, cumin and chili or even maple syrup and cinnamon! The possibilities are endless! We had these with beef tacos, chicken tacos and then I had a turkey wrap for lunch with my amazing Homemade “Deli” Turkey (in the Instant Pot!)- so good!   • Primal Palate Rice & Chicken in the Instant Pot

    I love Primal Palate Spice blends- gluten free, non GMO, Whole 30 approved, ORGANIC… the list goes on and on. They are such a great company and they really make it easy to pull a flavorful dinner together FAST. I have been playing around with their blends for a while now and have finally perfected Chicken and Rice in the Instant Pot.  The best part of this recipe is that you can use any of their blends and then adjust the vegetables and toppings to suit the flavor profile.   • Cinnamon Coffee Cake- paleo!

    A perfect Paleo, kid-friendly cinnamon coffee cake for the weekend. It all comes together in the food processor which makes it super easy. I always opt to use the food processor when I can. It incorporates the ingredients so well! (This is the one I have here!)
