    We love a taco around here… and I love being able to make a vegetable side for tacos (or to put in tacos!) which my kids will actually eat! Coleslaw or a chopped kale salad is always a win! This dressing is PERFECT on cabbage or shredded kale… even raw brussel sprouts. Actually, a raw broccoli salad with a little red onion would be awesome too!     Week four, that seems really unbelievable. I read a great NY Times article last week about relaxing on the “To-Do List”; easing up on the need to feel productive. I couldn’t agree more. We have enough pressure and stress on ourselves right now, do we REALLY need to have our house in perfect order too? Learn a new language (I laughed out loud)?   • Cocktails: Quaranita

    I came up with this one on our rocking Saturday night… I don’t care for super sweet drinks so this was perfect for me. Feel free to add a little simple syrup if desired! You can easily reduce the recipe down to one or two cocktails or save the leftover juice/tequila mixture in a mason jar in the fridge for the next night!  Also, in case you missed it in my March Favorites post; I have found a liquor delivery service that is SO EASY, and purchases from local stores!     I finally mastered the perfect dark chocolate buttercream frosting! Not too sweet (yes, that is a thing), perfectly chocolaty and smooth! Super simple and very easy. This batch will frost a two layer 9 inch cake or 24 cupcakes with a little leftover… and you know what? You can freeze buttercream frosting! Seriously!
