Orange & Cardamom Vinaigrette
So I am a sucker for a new product at Trader Joe’s… always perfectly displayed and priced so well that you don’t mind taking a flyer on something new. Sometimes they are misses, but not often. When I saw the new Pomegranate Vinegar the other week I had to get it! Anything to inspire a new salad dressing! After a bit of brainstorming I have come up with a great dressing for your Fall salads!
Orange & Cardamom Vinaigrette
1/2 Cup Olive Oil
1/4 Cup Pomegranate Vinegar (if you can not find this you could swap red wine vinegar or even raspberry vinegar)
1 to 2 Garlic Cloves (depending on size; 2 small or 1 large)
Zest of 1 Orange
4 Tablespoons Fresh Squeezed Orange Juice
1 to 2 Tablespoons Honey
1 Teaspoon Salt
1/4 Teaspoon Ground Cardamom
Few Grinds of Black Pepper
Add all ingredients to a blender and blend until smooth. Taste and add more salt, pepper and honey as needed. Store in jar in refrigerator.
I had this over a “leftovers salad” from the fridge today but I think it would be SO delicious over fresh spinach, thin sliced red onion, pomegranate seeds and goat cheese. Or try with steamed green beans and grilled chicken! Let me know what you come up with!
